Day 7

Hi guys, been a while yeah 😔it’s been a very stressful period you know new job and all but guys I’ve  been having the time of my life  and learning a lot. But I swear I haven’t forgotten my lovelies 😘💜

It’s the seventh day of our meal plan, one week already 💃🏽 How has it been so far? I know the first week is always the hardest but trust me it would get better. So let’s get to it

Spicy Carrot and Coriander soup with a slice of wheat bread


1 tbsp olive oil
1 onion, finely chopped
1 pinch ground cumin
1 pinch of crushed chillies
1 ¼ litres vegetable or chicken stock
500 g carrots, peeled and roughly chopped
1 tbsp finely chopped fresh coriander leaves, plus a few sprigs to garnish
20 g vegetable crisps, to garnish


Heat the oil in a large pan, add the onion and fry for 3-5 minutes, until softened.

Add the cumin and crushed chillies and fry, stirring, for a further 1 minute. Add the stock and carrots, bring to the boil, then simmer for about 15 minutes, or until the carrots are tender.

Transfer the soup to a blender and whizz until smooth. Stir through the chopped coriander then ladle the soup into serving bowls. Season with freshly ground black pepper and garnish with the extra coriander leaves and the vegetable crisps.

Don’t buy the ready prepared salads- the cut vegetables will have lost most of their vitamins. Buy whole leaves, they are more delicious and much better for you
